The Saijo area of Ehime Prefecture is blessed with abundant water, so much so that springs called "Uchikanuki" can be found here and there throughout the city. The slow fermentation process in the pure water gives the sake a mild, mild flavor without any curdling. Ishizuchi Sake Brewery's goal is to create sake that can be enjoyed at table.
