National Sake Fair 2025 (4) Kokuni-shu Fair in Osaka to coincide with the Expo. The fourth bottle is Hatsuhonohana. It is a sake from Sawada Sake Brewery in Kashiba City, Nara Prefecture. Would it be easier to convey the message if I say "joyful light"? As it is called Kashiba Mind, it is a sake made by growing dewy leaf wind from scratch locally. The color is a gentle yellow hue. The top aroma is of white grapes, mildly fragrant koji aroma, and rice aroma. From the gentle but thick mouthfeel, sweet and sourness like white grapes and young raisins spread thickly. The taste is refreshingly clean and crisp with acidity and mild bitterness. Delicious! It is similar to Tamagawa Ice Breaker. So, when served on the rocks, the sweetness is moderate and the taste is refreshing. Warmed up to lukewarm. It is easy to drink and has a fuller flavor. Personally, I like to drink it lightly chilled to fully appreciate its beautiful thickness. The brewer visited the Nara Prefecture booth and allowed us to taste two types of sake. I was surprised at the appearance of the bottle as I had only known the Kanji label, and it tasted delicious! I couldn't resist taking it home with me 😊. Nara sake is delicious!
