The Ryuki label is a character I wrote myself. Our goal is for all of our sakes to have a flowing taste with a hint of fragrance in the mouth. The balance between alcohol and sweetness is important in the production process, and the combination of rice used for this sake is chosen to give it a dry taste. We ferment the sake thoroughly before pressing it. It has been a long time since we had sake at a restaurant. My wife's tension ◎.
