Seems like a good time to start something new✨.
Tonight's sake is Yamagata's "Uyo Otokoyama Junmai Ginjo"!
I first learned that the north and south of Dewa Province (now Yamagata and Akita Prefectures) are called "Hanyo and Hanyin" just like "Sanyo and San'in"!
The rice is polished to 50% flat rice and made with Yamagata KA-1 yeast of the "Kyokai No. 9" series.
You can feel the sweetness of the rice, but it's so crisp that you think, "Huh? It's so sharp! A fresh sensation 😳.
I thought once again that this is the kind of sake that doesn't interfere with food!
Sake encounters are so much fun 😊.
