The name is an easy-to-understand expression of Ryoseki's 50% polish. Along with Suitama and Hanayu, it is a separate brand for Ryoseki's sake specialty stores.
The blue label Dry Evolution is a "deliciously dry" junmai ginjo with 50% polished Gohyakumangoku rice and a sake meter of +8.0. While retaining the sharp, clear impression of Gohyakumangoku, the soft, rich, rich umami and sweetness spread over the palate, giving it a rich, voluptuous feel. The acidity is elegant and crisp, and the balance of spiciness, umami, and aroma is well balanced, making this a modern dry sake worthy of the name "Evolution.
