A slightly weak nose of grapes, pears, and citrus. In the mouth, the aroma of the wooden bucket passes through the nose behind, and you feel a mild and slightly strong sweetness and acidity with citrus and lactic acidity, and a light but thick and slightly strong umami. The slightly weak acidity with no corners spreads quickly. It is a delicious sake with density, cleanliness, sweetness and sourness, and the character of Shinsei. It goes well with Mozzarella cheese.
