This sake is from the town of Wakasa in Fukui Prefecture.
There is a phrase that describes the beautiful climate of Fukui Prefecture: "Koshiyama Wakamizu (the green of the mountains in the Echizen region and the murmuring of the rivers in the Wakasa region).
It is quite sweet! The thick, thick sweetness rushes in with a slight hiney aroma, and expands with the pungency.
However, after the pungency subsides, the sweetness changes to a slightly sour, lightly citrusy sweetness. The aftertaste is like that of grapes.
It is a regular sake (probably), but it has almost no alsophilic taste.
This is quite interesting.
How about when it is warmed up?
The spiciness comes to the surface, and the sweetness of the aftertaste follows and soon disappears. The taste lasts about 3 seconds. It disappears with the taste of the snacks in the mouth. It is quite sharp.
It has a sharpness that does not make you tired of drinking. If you want to drink it as a mealtime sake, maybe warm it up.
This is the last of the three breweries in the Wakasa region (Miyake, Torihama, and Obama)!
