ちゅうえいToday's sake is the Ruri 2019 Ikkamoto Mokko Junmai from Shinsei Shuzo in Akita City, Akita Prefecture. It's a standard Shinsei with Kyokai No. 6 yeast. Even though the Kyokai No. 6 yeast has a mild aroma, when it is used by the brewery that created it, as you would expect, you get a solid green apple-like kapuechi. Delicious! This is the standard version. I can see why it is so popular.
