Yaei Brewery was founded by a person who was trained at Abe Brewery to make craft saké (🍶).
Since it is made with 10% koji, it is classified as other brewed sake under the Sake Tax Law.
The first aroma is sweet and sour.
In the mouth, it has a mild and rich sweetness like sweet and sour amazake.
It's like adding amazake and Sanuki Kuraudei and dividing it by 2.
It was quite delicious ✨.
Right now they are still borrowing equipment from Abe Sake Brewery, but by next spring they will start brewing sake in a renovated old house in Kashiwazaki city.
