Umakara Manzaku. Special Junmai once-fired sake. I was surprised that it was an autumn sake, and I didn't expect it to be available at this time of year.
It has the umami and roundness typical of hiyaoroshi (cold-aged sake), and the extra maturity gives it a more subdued taste. However, the spiciness and astringency are still there, making it a very drinkable sake.
