Sealed off a nice first Suiboku Ash with Turtle Tail 🎉.
The aroma is subdued and calm. It starts with the acidity typical of Shinmasa, and a hint of bitterness slowly emerges along with a hint of the aroma of the wooden vat.
The mouthfeel is clear and silky. You can enjoy its delicate and complex umami. The price is a little expensive, so we would like to enjoy it in small sips.
