It was a shame that the weather was so nice, but we couldn't go out unnecessarily at this time, so we drank lunch in the air-conditioned room. After preparing lunch, I took out a bottle of Yonetsuru's summer sake, Hotaru Label, from the refrigerator. The brewery and liquor store recommend drinking it on the rocks, but first I taste it cold as is. It has a ginjo aroma with the refreshing sweetness of green apples. The flavor of the rice spreads in the mouth, and the refreshing taste goes through the nose, and a good acidity and bitterness tighten the aftertaste. It is a summer sake with a low alcohol content, but with a solid taste and a smooth texture, it makes sense that it is recommended to drink on the rocks. The crisp dry taste comes out from the sweetness, and it is refreshing to drink in the daytime in summer. The back label recommends drinking it lukewarm, so I tried that too. The acidity becomes round, the umami increases, and the bitterness tightens. This is a sake for eating that shows many different faces depending on the temperature.
