The first sunbird! I've never had a kojoshu before.
So you use partial sake instead of brewing water. Hm-hm.
It sounds like white wine when it's poured into a glass!
And the aroma and the first sip is pretty much wine!
When you taste it slowly, the thick sweetness and sourness of the rice stand out.
It has a slight koji taste.
It's different from the fruity sweetness of Junmai Daiginjo which is also very strange.
