Although the astringency remains on the palate immediately after opening the bottle, as the second and third days go by, the astringency disappears more and more, and the sweetness increases while the fruity aroma in the middle of the bottle increases.
I thought this was not a sake to be drunk at a restaurant, but to be enjoyed at home to enjoy the changes in taste and impression.
Very interesting sake to pair with Omachi!
