カチカチ山
I bought this sake when I visited Ise at the end of last year.
It was brewed by Imanishi Shuzo, the brewer of "Mimuro Sugi", to be presented to the Ise Shrine.
It is a cloudy sake, so I stirred it before opening the bottle slowly.
The mouthfeel is silky like a lactobacillus drink, with a pleasant slightly carbonated gaseous sensation.
Then the umami flavor follows, and it goes down your throat with just the right amount of acidity.
It is very easy to drink, and you can drink more and more of it.
I am looking forward to seeing if it will become an umami type sake once the gas is released.
