Next, my partner introduced me to a sake tasting event last week at the University of Tokyo Brewer's Association last week 👀.
The first half of the event was listening to the brewers talk about their brews and the second half was a sake tasting. At that time, we had a bottle of Souei Shuzo's Danqing, which we bought as a souvenir at the purchase 🍶.
The aroma has a certain peculiarity of sake brewed with sake yeast and cemedine. On the palate, it has a lactic acid-like sourness and umami flavor that disappears cleanly. Souhyo seems to be a sake brewery that produces a sake yeast. It is served with summer potatoes with plum flavor, but the acidity is neutralized and sweetness is felt. As the temperature rises a little, it becomes milder and less peculiar, making it easier to drink. Delicious✨
