I happened to stop by Imadeya, and they were having a comparison of 2018 and 2021, so I had some.
This is the 2021. It is a light and elegant sake with a good balance of acidity, umami, and bitterness✨.
I have the impression that it will go well with any meal.
The label on the bottle also creates a sense of luxury.
It was very tasty!
