シン・ハブYamagata Prefecture Sugiyuu Warabioka Sake Brewery. This is a limited edition sake that is only distributed by a few stores in Japan. It was mentioned in some online article that it was made at the request of the owner of a pioneering local sake store. Is this the same store that sold this? The owner of the store was very much in favor of it. The rice used is Dewa Sanbana. Opening the bottle...well, it is as gorgeous as expected. It is in the middle of the gorgeous, sweet and umami type. The flavor is a bit rich and has a strong umami. It is more like a tokusyu jun with a lot of umami than a well-rounded jungin. Well, it is delicious either way. It can be enjoyed on its own, but if you want to pair it with food, what would you recommend...cold appetizers, cheese, sweet and sour simmered dishes, or vinegared dishes?
