Nihonshu punk
I was so surprised by this Yamahai Junmai-shu from Saga prefecture!
The fact that Amabuki uses flower yeast brought so much extra floral aromas to this outstanding earthy, umami packed Junmai!! Despite being in this class it held itself lightly, super well banced and something truly special! I think Amabuki is my favourite brewery in Japan. Wow!
