Mirai - A sparkling sake from The Artisan Sake Maker of Vancouver, Canada
In the glass is a storm of bubbles. Aroma of tropical fruits - papaya, banana. A thick umami mouth quickly cut up by the bubbles. The flavour blossoms in your mouth. The expression is neutral, not sweet, not dry. The side of the tongue and the top back of the mouth enjoy the flavour blossom. A long finish on the top of the palate. Very good with caviar or a mushroom risotto. This is a corked sparkling, too.

This Vancouver, Canada sparkling is probably my favourite of this category. A clean finish, a touch of sweetness, and a full mouth. Not overpowering. And while it's called a junmai nigori, the cloudiness is tempered by the sparkling element. It's also nice that they sell it with a bung bottle, but, honestly, it never lasts long enough to reseal.
I find this pairs really well with Fall salads, particularly beets. It's also a good match for sous vide octopus and shellfish.
