The brewery is still brewing sake in a 200-year-old building, and the quality of the sake is made with brewer's yeast nurtured in a 200-year-old brewery.
The brand name is named after "Kaimyo Gakko" (opened in 1872), the oldest elementary school in Shikoku.
◉Kaimei Junmai Ginjo
A sake with an impressive acidity typical of junmai (pure rice). It is not an aged sake.
◉Kaimei Iyo no Koigokoro (Sakurahime yeast)
Sourness.
Kaimyo Aged Junmai
Aged, mildly acidic, with a caramel aroma on the nose.
Kaimyo Unfiltered Junmai 2001
Aged for over 5,000 yen for a 4-pack, this is a very mature sake with a mildly sweet flavor that I personally enjoy. The price is over 5,000 yen for a four-pack, but it tastes great warmed up.
◉Long-aged, fortified sake.
This is an unfiltered sake with alcohol added to raise the alcohol content to 25%. It has a very alcoholic taste and is treated as a liqueur.
The owner of Ichisan Shuten, a sake shop in Kobe that mainly sells old sake, was the person who helped us. The lineup included a lot of aged sake.
