There is little fruitiness.
There is a strong whey flavor similar to that of sake yeast yeast, with a hint of cheese.

There is a good amount of umami on the palate.
The full-bodied taste centered on sweetness and acidity makes it drinkable in spite of its low alcohol content.
Mimuro cedar's limited edition zodiac sake
The style is as expected from Mimuro Sugi's low-alcohol series, but the density and fineness of the taste give it a higher quality for the price.
