Yamagata Prefecture's original "Haenuki" rice Today, the representative rice of Yamagata Prefecture is "Tsuyahime" and "Yukiwakamaru", but "Haenuki", which was introduced in 1993 as Yamagata Prefecture's original rice, is a great predecessor of these rice varieties. Summer Unfiltered Unpasteurized Sake Following Nanahoshi Eiko-Fuji is a junmai ginjo brewed with 100% "Haenuki" rice from Yamagata Prefecture, which is mainly used for food. It is the second in a series of limited summer sake stars following Nanahoshi, and is now available in an unfiltered, unpasteurized, undiluted form. The rice polishing ratio is kept at 60% (although it is still too high) as if it were made from edible rice, but it has a clean, uncluttered taste. It is popular for its smooth taste, which makes it refreshing to drink in summer. It is a junmai ginjo that can be enjoyed with a wide range of foods.
