4. Akitsuho from Kaze no Mori, picked in the middle of 807. The mouthfeel is refreshing and fruity like a melon. Although the rice is 80% polished, it is not sweet and has a good balance of sharp umami and moderate acidity. Akitsuho, 80%, picked in the middle, about 1,700 yen, Otsuka Sake Brewery in Honmachi.
