Sake mania
Yuki maiden is the newest sake rice brewed by Yamagata Prefecture in 2015, and was developed to produce a ginjyosu of the highest quality with a neat taste unique to Yamagata Prefecture.
It took 15 years to brew the brewed rice, and the mother of Yuki goddess, Izumo no Sato, and the father, Kuranokana, took 15 years to brew. It took 15 years to cultivate the rice. Yuki Goddess has a low protein content, so when brewing, she suppresses amino acids to produce a crisp and smooth brew, which is the characteristic of Daiginjo.
