This sake is brewed with an ancient rice called Kabashiko, which spread throughout Kyushu during the Kyoho period.
The history of "Higo Kabashiko," a native species of rice that took three years to revive from 40 hulls of seed rice, is older than that of Hozabu, which was born in the Tempo period, and has a history of being famous as a high quality rice.
