I went to Kumamoto on a business trip. I went to Kumamoto on a business trip. It's a shochu kingdom, and the store I went to didn't have any sake, so I took a chance and drank a rice shochu with hot water.
I paired it with horse sashimi and spicy lotus root, which was definitely more shochu than sake. The soy sauce is Kyushu soy sauce, which has a strong sweet taste, and the dishes have a distinct flavor, so I had a feeling that the sake would be too limited in what it would go with.
Anyway, I admire the wisdom of our ancestors who have optimized local production for local consumption, or rather, local combinations of food and sake.
