crag Sake named after the words of a monk from the Kamakura period (1185-1333): "Ko-kyo shinshin teru ko ko kyo. It is austere. Not in terms of taste, but in terms of appearance. The aroma is somewhere between twisted and matured, which I personally love. When you swallow it, the alcohol feeling remains in your mouth. More than anything else, it has a strong umami taste. It is very strong.
