I was on a business trip to Mito, so I tried to find sake, but I bought it by name (lol) It's a little different, but it's a jacket buy. Crystal silver with a sense of transparency. It has a soft woody aroma like cypress, with the main aroma of rice, such as cooked rice and topping. Serpentine with a slight sweetness in the back. There is also an aroma like yogurt and cheese derived from lactic acid. The ginjo scent is mild, and you can sense melon and the like, but it's not the main focus. It has the impression of a classic creation. The attack is strong, with a rich sweetness and a strong alcohol (although at 16%, it seems to be in the normal range). The acidity is fine and there is a bitterness that gives it fullness. The after-flavor has the most Ginjo aroma. It is probably best served at room temperature or lukewarm. I've tried warming it up, and it's a good match for this solid bad boy.
