寿梨庵
Recommended by the owner of a certain sake shop that I have been a customer of for many years. I remember seeing a review on Sake no Wa before that said it was probably purchased at this store. It is made with 50% Yamada Nishiki polished rice and No.7 yeast.
It was slightly foamy when I opened the bottle. I drank it for about two weeks after that, and the flavor gradually settled down, but it was still thick! Full-bodied, heavyweight. It has too many elements. If you drink it at room temperature, the various flavors will come at you at different times. I tried changing the temperature and heating it up, but I think it's best to keep it hot. This time, the whole thing became a sphere and boom. But there's a finesse to it that I think comes from the Yamada Nishiki.
I thought it was a very deep sake.
