I wonder if it is in the same family as Tamura. However, there is no astringency. It is a strong sake with a hint of koji (malted rice), but it disappears when you notice it. It's not like sashimi, but horse sashimi might be possible. Seared salmon might also be good. Miso, fried bean curd, and cheese are also possible, but right now I want salami.
