This Daiginjo is a 35% Yamadanishiki 35% polished Daiginjo from the National New Sake Competition tanks.
Fresh, effervescent, and with a nigori component, this is a beautiful sake that is both refined and straightforwardly "delicious.
The main dish was a roast beef of Wagyu beef thigh, which was prepared by request.
