This is the second consecutive month that Rokumaru has been lightly cloudy. Personally, Yamadanishiki was number one in the first half of 2023, so I was aiming to buy this series when I found it, and forced myself to buy it under the tight fridge situation lol.
Both the standing and lingering aromas are pineapple-like in accordance with the Rokumaru concept.
The composition is quite interesting, with a restrained sweetness, a strong umami, a bit of acidity, and a moderate bitterness. For a sake with this kind of aroma, the bitterness is quite noticeable.
Thanks to this, it is not too modern and juicy beyond the aroma, but it is not classical either, but it is a niche sake of a type that is not likely to be found anywhere else. I think people who are into it will have a hard time getting into it.
On the second day, the aroma was mild, and the slight carbonation, refreshing acidity, and dry flavor were wonderful... It went too well with Cardi's white truffle casserole. It's like a cider, but mature and goes with the meal....what a great wine!
The aroma was quite different from that of Yuyamanishiki, and I realized the depth of Rokumaru. I hope to encounter Yamada-Nishiki again this year..!
