Seiryu-nyori" brand is one of the new Seiryu Shuzo brands created in 2020. It is carefully brewed using only rice harvested in Saijo City, Ehime Prefecture, and water from the Shikoku Mountains, which can be seen from the brewery. Ishizuchi, the highest mountain in western Japan, which heralds the arrival of winter. Brewed with "Matsuyama Mitsui (60% polished rice)" from Saijo, Ehime Prefecture and Ehime yeast "EK-1," this special junmai nigori with a sake strength of -4 has a mellow, calm sweetness and a fluffy, umami flavor. The aroma is fresh, with a fresh, fresh, raw sake-like aroma of apples, melon, and white flowers. As the name "RIN" suggests, the aroma is not too gorgeous, but clean and refreshing. The taste is a very easy-drinking, "gentle" nama-shu with a subtle petit flavor, a clear mouthfeel, a fresh and fresh taste, a natural spread of sweetness and umami, a crisp and clean aftertaste, and a clear flavor with little cloying taste. It is neither too spicy nor too sweet, and goes well with a wide range of dishes. I have found a versatile and delicious sake. It is a delicious 😋 sake.
