In one word LOVELY!
After honjozo yamahai and junmai ginjo this is my third bottle of Yuki no Bosha. I must say all are tasty. I heard the toji revived an old yamahai method for this Hiden yamahai. Saya Shuzoten uses their own in-house yeast.
Aroma is floral and very pleasant, reminds me of lilies. Flavor is fresh, gentle and crisp, bit on the dry side.
